Our roots are in the region. Their products, their identity and their craftsmanship form the foundation of our culinary work. Regional ingredients and familiar flavours serve as inspiration for us, which we interpret and develop in a modern way. At the same time, we think outside the box.
International flavours, techniques and spices enrich our dishes and combine with regional products to create a cosmopolitan, contemporary signature.
A clear commitment to seasonality characterises our daily work. We cook to the rhythm of the seasons and consciously put on our plates what is growing and maturing.
